Cabbage has a rich history, dating back to approximately 4,000 BC in China. The Romans also cultivated it and praised its healing properties; philosophers Pythagoras and Cato both wrote about the humble cabbage. Jacques Cartier introduced the first cabbage to America in 1536. Cabbages were highly popular in colonial America, often pickled and preserved in various ways to provide food during the winter months.

    How To Grow

    Sowing: Begin planting your Red Acre seeds indoors 8-12 weeks before the final spring frost, placing them in nutrient-rich soil 1.3 cm deep and 5 cm apart. Since the initial cabbage crop should mature before the summer heat sets in, transplant your seedlings about 4 weeks prior to the expected last frost date, spacing them 30-45 cm apart in rows 90-120 cm apart, with the stems buried halfway. For a autumn harvest, sow seeds directly or transplant seedlings in the middle of summer. To reap the benefits of companion planting, pair purple cabbage seeds with fragrant herbs or potatoes; avoid planting them near tomatoes or pole beans. Herbs like thyme, peppermint, sage, and rosemary can deter the destructive white cabbage moth.

    Growing: Protect young plants from severe frosts by covering them. Apply mulch around them to maintain soil temperature and ensure consistent soil moisture to prevent cabbage splitting.

    Harvesting

    Harvest cabbages when they feel firm and reach a suitable size. Even when stored for winter use, small Red Acre cabbages remain tender.

    Seed Saving

    In late fall, mulch at least six different cabbage plants to promote genetic diversity. In cold climates, it may be necessary to dig up the entire plant and store it over winter in moist sand at approximately 4 degrees Celsius. Replant 4-6 weeks before the final spring frost. If the heads are still firm, make a deep X cut at the top to facilitate stem removal. The stem will grow approximately 120-150 cm tall, producing numerous yellow, four-petaled flowers. Allow the flowers to mature; when seed pods develop, harvest them and let them dry. Extract the seeds from the pods and store them in a cool, dry place for up to five years.
